The Three Chemical Types
- Alkaline (caustic) cleaners — your everyday cleaner; dissolves yeast, protein, and hop resins; use every 14 days per Brewers Association guidance
- Acid descalers — targets beer stone (calcium oxalate) and mineral scale that alkaline cleaner can't touch; use every 3–6 months as a supplemental deep clean
- Sanitizers — kills residual bacteria after cleaning; always the final step before returning lines to service

Cleaning Chemicals FAQ
Can I skip the acid clean and just use alkaline cleaner every time?
No — alkaline cleaner doesn't dissolve beer stone (mineral scale), only organic buildup. Skipping periodic acid cleaning lets scale accumulate over time, which eventually affects flow and flavor even with regular alkaline cleaning.
Do I need a separate sanitizer, or does the cleaner already sanitize?
Cleaner and sanitizer do different jobs — cleaner removes buildup, sanitizer kills remaining bacteria. Always run sanitizer as the final step after cleaning and rinsing, not as a substitute for either the alkaline or acid clean.
